Ingredients

  • 1 brioche bun

  • 6 oz ground beef (80/20 blend)

  • 2 slices cheddar cheese

  • 3 slices bacon

  • 1 medium onion, thinly sliced

  • 2 tablespoons bourbon

  • 1 tablespoon brown sugar

  • 1 tablespoon butter

  • Salt and pepper to taste

  • Olive oil

Directions

  • Prepare the caramelized bourbon onions: Melt butter in a skillet over medium heat. Add sliced onions and cook, stirring occasionally, until softened and translucent, about 10-15 minutes.
  • Add bourbon and brown sugar to the skillet. Continue cooking, stirring frequently, until the onions are caramelized and the liquid has reduced to a glaze, about 5-10 minutes. Remove from skillet and set aside.
  • Cook the bacon: Cook bacon slices in a skillet over medium heat until crispy. Remove bacon from skillet and drain on paper towels.
  • Prepare the burger patty: Season ground beef with salt and pepper. Form into a patty slightly larger than the bun.
  • Cook the burger: Heat a skillet or grill pan over medium-high heat. Add a little olive oil if needed. Cook burger patty for 4-5 minutes per side for medium doneness.
  • Add cheese: In the last minute of cooking, add cheddar cheese slices to the burger patty and let melt.
  • Assemble the burger: Toast the brioche bun lightly. Place the cheeseburger on the bottom bun. Top with bacon slices, followed by the caramelized bourbon onions. Place the top bun on the burger.
  • Serve immediately.
