Ingredients

  • 1 bag (32 oz) frozen tater tots

  • 1 lb ground beef (80/20)

  • 1 small onion, diced

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 2 cups shredded cheddar cheese

  • 8 slices bacon, cooked and crumbled

  • 2 tbsp chopped fresh parsley (optional)

Directions

  • Preheat oven to 400°F (200°C).
  • In a large skillet, brown the ground beef over medium-high heat. Drain excess grease.
  • Add diced onion, garlic powder, salt, and pepper to the skillet with the ground beef. Cook until the onion is softened, about 5 minutes.
  • Spread the ground beef mixture evenly in a 9×13 inch baking dish.
  • Sprinkle 1 cup of shredded cheddar cheese over the ground beef.
  • Arrange the frozen tater tots around the edge of the baking dish, covering the beef mixture.
  • Bake for 30-35 minutes, or until the tater tots are golden brown and heated through.
  • Remove from oven and sprinkle the remaining 1 cup of cheddar cheese over the tater tots.
  • Return to the oven for 5 minutes, or until the cheese is melted and bubbly.
  • Top with crumbled bacon and chopped parsley (if using).
  • Let stand for 5-10 minutes before serving.

Notes

  • You can use any type of shredded cheese you prefer.
  • Add other toppings like diced tomatoes, pickles, or sour cream.
  • For a spicier casserole, add a pinch of red pepper flakes to the ground beef mixture.
